...For someone my age and stupidity (12 and very), but is there a good way to find out about mapping for UT?

In the UT2004 Technical section there are some topics, of which this one is probably the most useful. Mapping's a little confusing to start with, but once you get going with it it's pretty easy to pick up new things.

Depending on the version of UT that you have, you might already have tutorials on one of your CDs/DVDs. If not they can be found online through that other post (see Shards' link above) at 3dbuzz.com.
